Ingredients
- 2 large medium ripe plantains(Nenthrapazham)
- 1/2 cup grated coconut
- 1/2 tsp cardamom powder
- few chopped cashew nuts
- 2-4 tbs sugar
- 2 tbs ghee
- 1 egg
Directions
Cook the plantains in microwave (or in water) and mash it. Make sure
not to overcook. ( mashed bananas should be in a dough consistency).Heat ghee in a pan, add cashew nuts followed by coconut cardamom powder
and sugar. Saute for 3 to 5 minutes. Then add slightly beaten egg, fry few more
minutes until slightly golden brown in color. Keep the filling aside. Now make lemon
sized balls out of cooked bananas, flatten with fingers and place some filling into it.
Cover and make some oval shapes. Do the same with the rest of the balls and deep
fry till golden brown.
